the obvious impediment thereto that a particular forms of a word
would be learned individually rather than knowing its forms
generally and their underlying grammatical principles.

Old Icelandic Course Materials
(A couple of texts. Click on words to bring up English
definitions. Not as much detail as the above site, but still lots
of useful grammatical points in the notes.)

When you feel ready, I think reading something with the help of a
translation (and dictionaries) is a great idea. You can always post
grammatical questions here. Besides online resources, The Viking
Society for Northern Research [
http://www.shef.ac.uk/viking-
society/ ] have a number of printed texts for sale, some with
parallel translations, some with vocabularies and notes--some with
both.
Good luck!
