The -f- needs some explanation :

If we start with *para- *weredus "someone around the horse",

we should get *per-vred in old French

BUT we get *pal-fred

SO we need explain this (-f-) with an interference with another word

I think we have to re-analyze greek-gaulish hybrid *para- *weredus

as Old French compound *para- + fren-

that is "the one who prepares/cares (para- Latin parare) about horse's harness/bridle/mouth (fren- Latin frenum)

Otherwise you cannot get [-f-] which is abnormal : *w cannot yield [-f-]

I suppose Med.Lat. parafredus/palafred us may itself be
Germanic-influenced (via Frankish --> Old French --> Irish, English,
Mediaeval Latin). A word of this kind can be borrowed to and fro between
neighbouring languages.
