It is you the one who forgets this on a daily basis. (Look at your
citation from Rosetti's work, about the stressed /e/ syllables,
whereas <e> in üveg is unstressed, and it is a written <e>,
but a pronounced /ae/, which is not the same vowel. Just as a
by-the-way.)
