I just finished saying that it's from Greek Aiguptos. Specifically
from Arabic Qibti first. So its pronunciation has little bearing
on the origin of the name. This name has been tossed around from
language to language a number of times before we arrived at "Copt".

Clearly "Aiguptos" is closer to the source than "Copt" is, but as
I said, we know that it all derives from an Egyptian phrase meaning
"House of the Ka of Ptah" so you have to start from there if you
want to theorize that it's Minoan somehow.
