Because for most linguists it isn't.
"Creole" has been suggested at various times for various groupings in IE,
including Germanic and even for the whole of PIE, but on the usual
definition of Creole, the evidence just isn't there - just as it isn't with
Romance languages. You're flogging a dead horse. Unless of course, you
change the meaning of "creole" to make it mean "showing evidence of contact
with some other language". But if that's the case, you're only saying what
we all know.
