There are hundreds - many have been translated at least once into English -
though it is very hard to find some of the translations, as they are to be
found in Celtic studies journals from the 19th century - others have been
translated into German, and there is still a sizable amount that remain
untranslated to this day.

Well, there are too many texts to name here - see the following site for a
list of texts :
http://titus.uni-frankfurt.de/texte/msomit/omiteinl.htm

You can go to the following site to see some of the texts grouped into their
relative genres (click on the "captured" link):

Start with Koch & Carey's "The Celtic Heroic Age" and augment it with Cross
& Slover's "Ancient Irish Tales" - this is the best starting point.
