You probably can. I had no trouble doing so. Although I am
running Word 97 on Windows 98, it should work in a similar
way on WindowsXP.

First I placed é on the document by pressing cntl-apostrophe
and then pressing e. Then I highlighted that and selected
Edit->Copy (to clipboard). Then I went to Tools->Autocorrect.
I entered 'e in the "Replace" box and in the "With" box, I
pressed cntl-v (which pastes the clipboard), so it inserted the
é that I had copied earlier. Then I clicked on Add.

Now whenever I type 'e, it's automatically replaced by é.
