Nina,
That converter seems to work. If the pali characters come up
correctly when you visit this website:
http://studies.worldtipitaka.org/tipitaka/14S5/12/12.2/12.2.1
you should be able to do the same thing on your Mac.
1. You would mark and copy a piece of pali text from your web browser
window viewing the familiar pali sutta above
2. On another browser window, go to the converter page:
http://www.unicodetools.com/unicode/utf8-to-latin-converter.php
3. That page has a section that you paste the text you copied from
worldtipitaka.org.
4. Once pasted, click on the "convert" button.
5. the top of the page now has a section called "coversion results",
which is the utf8 version of the HTML pali text you grabbed from the
other browser window.
6. Now you mark and copy the "conversion results" text, paste it into
your email program and it should work.

I don't know if you currently type things by hand into Velthius, but
worldtipitaka has the pali canon, and probably the commentaries,
abidhhama, vism., as well.
