Hi Bryan, I finished my master thesis on ON pronunciation just
recently. While my main focus was on the comparison of Old English
and Old East Nordic pronunciation, I also had to deal with Old Norse.
There are indeed not many detailed descriptions on pronouncing
theory, but I found some books quite useful, among these was :

Haugen, Einar. 1982. Scandinavian Language Structures. A comparative
historical survey. Tübingen: Max Niemeyer Verlag.

The book deals with all Scandinavian languages and some passages seem
doubtful to me, but it's a start, anyway.

A very skillful and informative work which is also quite up to date
is:

Bandle, Oskar (Ed). 2002. The Nordic Languages. An International
Handbook of the History of the North Germanic Languages.Volume I.
Berlin, New York: Walter de Gruyter.

The book contains articles by international scientists, you'll find
sections on poronunciation as well as mrphology etc., but also
bibliographical sections for each topic with criticism and appraisals
for other authors. Maybe your local scientific library has this book,
it is quite expensive to buy (around 500 Dollars).
