I am currently doing a degree in Icelandic Studies at University College London (part-time because I work as well.)  We take 13 modules and spend 1 year abroad.  Of those modules, 1 can be from a different department, e.g. Old or Middle English.
 
You can also do a degree in Viking Studies or Scandinavian Studies or a combined degree e.g. Scandinavian studies + Management studies.
