If all texts present the same level of difficulties and intricacy (the easier
ones being a better choice for beginners) then it just comes down to personal
taste.  Voluspa and Havamal have a wide appeal, but these are already
available online in Old Norse somewhere, are they not?  In any case, the
versions I've seen don't have nearly the extent of gloss that you are
providing.

My vote is for Baldrs draumar, but that's just a personal thing.
