Diccionario de la Real Academiz Española --it's online and is for Spanish what the OED is for English and much more, since it's official
Coromines, or Corominas in Spanish, was the greatest etymologer of Ibero-Romance languages. After Corominas, Menéndez Pidal would probably be next.
