It seems a folk-etymology erected to provide a link between Europa, the continent and Europa, the woman carried by bull-shaped Zeus. Euryops "large-face" would be a good epithet for a cow.
 
I suspect it is pre-Greek and cognate of Eurybia, a sea-goddess.
