Whoops! Apparently /sho/ DOES exist in Middle English and there's
even a bibliographical reference online explaining it:

Britton, D. (1991) "On ME she/sho: a Scots solution to an English problem",
Nowele [North-Western European Language Evolution]17, 3-51."
